Cranberry Goat Cheese Log is the Easy Holiday Appetizer You Need
I made this cranberry goat cheese log from Peas & Crayons for a Thanksgiving Day appetizer. It is amazingly flavorful and simple – two of my favorite aspects of any recipe! Another bonus is you can make it ahead, double it (like I did), and/ or completely customize the ingredients (like if you have a husband that hates pecans with an unreasonable passion…or something).
It is excellent with crackers or pretzel thins. The original recipe can be found at Peas & Crayons.
Sadly, I have no final product photo because people ate it too fast! But, it looks just like this but mushed together and in a log shape.

Cranberry Goat Cheese Log

- 1/4-1/3 c. dried cranberries, chopped
- 1/4 c. walnuts, chopped
- 1/4 c. pecans, chopped
- 1 Tbsp. fresh Italian Parsley, chopped
- Crackers for serving
Instructions
- Mix all the chopped ingredients to combine. Then smush the goat cheese into the mixture until all the ingredients are combined.
- Plop the goat cheese mixture into the center of a square of plastic wrap and begin to shape your log by wrapping it until you are happy with the shape and pressing out the tube.
- Secure the ends and refrigerate until you are ready to serve.
