Cranberry Goat Cheese Log

- 8 oz. Goat Cheese room temperature
- 1/4-1/3 c. dried cranberries chopped
- ¼ c. walnuts chopped
- ¼ c. pecans chopped
- 1 Tbsp. fresh Italian Parsley chopped
- Crackers for serving
Mix all the chopped ingredients to combine. Then smush the goat cheese into the mixture until all the ingredients are combined.
Plop the goat cheese mixture into the center of a square of plastic wrap and begin to shape your log by wrapping it until you are happy with the shape and pressing out the tube.
Secure the ends and refrigerate until you are ready to serve.
For a pretty presentation warm cranberry sauce and spread it on the plate where you will place the log. Then sprinkle with extra parsley.
You can easily make the Cranberry Goat Cheese log 3-5 days in advance and kept, wrapped in plastic wrap, in the refrigerator.
