Cranberry Goat Cheese Log is the Easy Holiday Appetizer You Need

The holidays are a time for feasting and celebration. And what better way to start your holiday feast than with a delicious appetizer? This cranberry goat cheese log is the perfect way to kick off your party.

I made this cranberry goat cheese log from Peas & Crayons for a Thanksgiving Day appetizer. It is amazingly flavorful and simple – two of my favorite aspects of any recipe! Another bonus is you can make it ahead, double it (like I did), and/ or completely customize the ingredients (like if you have a husband that hates pecans with an unreasonable passion…or something).

The goat cheese is creamy and tangy. The cranberries are sweet and tart. The pecans are nutty and crunchy. And the spices are warm and festive. This appetizer is sure to please everyone at your party.

Sadly, I have no final product photo because people ate it too fast! But, it looks just like this but mushed together and in a log shape. I did finally get a photo of the cranberry goat cheese log but, alas, it is not amazing because, again, people wouldn’t leave it alone! It still has the wrinkle marks from the plastic wrap and did not get a chance to get it’s fancy garnish and styling. But, it’s still delicious.

Ingredients
  

  • 8 oz. Goat Cheese room temperature
  • 1/4-1/3 c. dried cranberries chopped
  • ÂĽ c. walnuts chopped
  • ÂĽ c. pecans chopped
  • 1 Tbsp. fresh Italian Parsley chopped
  • Crackers for serving

Instructions
 

  • Mix all the chopped ingredients to combine. Then smush the goat cheese into the mixture until all the ingredients are combined.
  • Plop the goat cheese mixture into the center of a square of plastic wrap and begin to shape your log by wrapping it until you are happy with the shape and pressing out the tube.
  • Secure the ends and refrigerate until you are ready to serve.

Notes

For a pretty presentation warm cranberry sauce and spread it on the plate where you will place the log.  Then sprinkle with extra parsley.
You can easily make the Cranberry Goat Cheese log 3-5 days in advance and kept, wrapped in plastic wrap, in the refrigerator.
