  • Fill a large pot with water and add the salt. Bring the water to a boil.
  • Gently lower the eggs into the boiling water using a slotted spoon. Only put as many as can lay in a single layer.
  • Reduce the heat to low and simmer: 6 minutes for set whites and runny yolks, 10 minutes for fully cooked through, for 13 minutes for those of us who don't trust that they will be done at 10 minutes (or for jumbo or extra large eggs).
  • Remove the eggs from the boiling water and immediately plunge them into a bowl of ice water.
  • Let the eggs cool in the ice water for 5 minutes. then peel and enjoy! While the eggs are cooking prepare the trail mix.

Prepare Trail Mix

  • Combine all and store in an air tight container. Use within a few weeks.

Optional Toasting

  • To get an extra crunch, combine nuts, coconut chips, and seeds. Put on a rimmed baking sheet and into a cold oven. Roast at 350℉ for 15-18 minutes or until mix is toasted and golden colored.
  • Once cool, toss in additional add-ins and store in an air tight container.
